Ingredients
Medium prawns 1/2lb (300g), Bean-starch noodles 1 bundle 100g (3.5oz), Shrimp roe 1 1/2 teaspoons, Scallion 1 (chopped)
Seasoning
Amoy Oyster Sauce 2 tablespoons, Amoy Gold Label Light Soy Sauce 2 teaspoons, Water 1 cup
Marinade
Pepper a pinch, Starch 1/2 teaspoon
Thickening
Method
Shell & devein the prawns. Scrub them with 1/2 teaspoon of salt. Rinse and repeat twice. Dry the prawns, add marinade and mix evenly.
Soak the noodles in water until they are soft. Cut in four sections and drain well.
Shallow fry the shrimps until they are fragrant, then scoop them out. Stir-fry the shrimp roe on low heat until fragrant. Put in seasonings and bring to the boil. Put in noodles and boil until the liquid is nearly all gone. Return shrimps, add scallions and stir fry until dry. The dish is ready.
