Eggplant with sautéed beef shank

Ingredients

Sliced beef shin 155g, eggplant 200g, diced green pepper and red pepper 55g, minced garlic 2 tsp

Seasoning

Amoy Seasoning Soy Sauce 3 1/2 tsp, Amoy Premium Oyster Sauce 1 tsp, sugar 1/2 tsp, water 4 tbsp

Thickening

Corn starch 1/2 tsp, water 2 tsp

Method

Cut eggplant into thick strips. Soak eggplant in salted water. Drain well. Put on plate and steam for 5 minutes. Drain well.

Sauté minced garlic, green pepper and red pepper. Toss in beef shins and seasoning. Stir in thickening, cook until sauce boiled and thickened. Pour over eggplant and serve.
