Ingredients
115g (4oz) chicken drumstick meat (diced), 20g (0.75oz) ginger (peeled), 1 egg, 1 spring onion (sliced), 2 bowls leftover rice
Seasoning
2 tbsp Amoy First Extract Reduced Salt Soy Sauce with Black Bean, 1/4 tsp sugar
Marinade
2 tsp Amoy First Extract Reduced Salt Soy Sauce with Black Bean, 1/8 tsp sugar, Pinch of pepper, 1/2 tsp cornflour
Thickening
Method
Mix the diced chicken with the marinade.
Slice the ginger, then pat with a knife and mince.
Heat the rice in a microwave for 1 minute.
Beat the egg and mix with a pinch of salt. Heat some oil in a pan and fry the egg until it is nearly cooked. Break into small pieces, remove from the pan and then place to one side.
Fry the ginger until fragrant. Add the diced chicken and fry until cooked. Add the heated rice and separate with your frying utensil. Add the sauce ingredients and mix well. Fold in the spring onion and fried egg and serve immediately.
